Our Clients, as they get older, often have problems eating regular diets and need soft foods. On this page, we have a collection of easy to chew recipes. We always welcome new ideas for nutritious meals our clients and readers can enjoy.
Southwestern Style Crepes
This is a quick and easy meal for lunch or dinner.
For the crepe batter take : 1 egg, some milk and a pinch of salt and stir together.

Fry crepe's individually in a non-stick pan , coated with 1 teaspoon of cooking oil of your choice until top sets. Flip crepe to brown lightly on other side.
For the filling: 1 can of all white chicken or leftover chicken pieces .
Season with piquante sauce and add 1 or 2 table spoons of sour cream
and heat (don't cook).
Fill crepes with chicken mixture, roll up, sprinkle some cheddar on top and serve with tomato slices or salad.
Italian Polenta
For this tasty recepie you need a roll of polenta, Italian or breakfast sausage, 1 small onion, 1 can of tomato sauce and Parmesan & mozzarella cheese.
Slice the polenta in 1/4 inch slices and fry slices in a non-stick pan golden brown.
Fry the sausage and onions chopped into small pieces. Drain the excess fat.
Layer the polenta slices, browned sausage & onion in an oven-save baking dish.
Add Italian spice mix to tomato sauce and pour over the layers,
Top with a mix or Parmesan and mozzarella cheese and bake at 400 F for about
15 minutes until cheese is melted and lightly brown.
Serve with salad or your favorite veggie.
Milk-Rice
Take about a handful of rice (preferably short or broken) in milk with a pinch of salt and some vanilla extract. Stir frequently. Simmer on low heat and add milk as needed. When rice is halfway done, add some sugar or sweetener and apple pieces to finish cooking with the rice.
Rice is done when it sticks nicely together and is soft ( no hard center) and apple pieces are soft.
Serve with butter or margarine flakes and sprinkle with cinnamon sugar.
(If you need to add extra nutrition, mix in one raw egg after rice has cooked. Nobody will know it's there)
Easy Quiche
One frozen pie crust, Knorr Leak
soup Mix, 5-7 eggs, grated cheese ( Swiss, Mozzarella or other white cheese) Spinach or broccoli, minced onions, ham, bacon or other meat finely chopped.
In a bowl mix eggs & soup mix together and fill pie crust with 1/3 of mix. Layer veggies onions and meat, spread 1/3 grated cheese over it, repeat and finish top layer with cheese.
Bake in preheated oven at no more then 325F for about 20 minutes or until egg mix has set
Holds a few days in fridge and can be heated in microwave.
